Tat Soi’s mild, tender flavor is good for baby leaf salads and in braising mixes
White Stemmed Pak Choy has thick, succulent leaves and a mild brassica flavor. It’s also commonly used as baby leaf in salads and braising
Tokyo Bekana is a mild, lettucy-mustard green that’s great as baby green. The more you harvest the more it’ll grow back!
Shanghai Green is perfect for stir frying and sauteing — plant it closely for baby size plants
Wasabina Mustard Greens are tender to maturity, cold tolerant, have a spicy wasabi flavor and are slow to bolt
